1 whole chicken, cut into serving pieces

1 bunch dahon ng sili (chili leaves) or dahon ng malunggay (moringa leaves)
1 thumb-sized ginger, sliced into thin strips
1 medium onion, chopped
4 cloves garlic, minced
4 cups chicken broth or water
2 tablespoons fish sauce (patis)
Salt and pepper to taste
2 tablespoons cooking oil

Step 1: Prepare the Ingredients
Clean and cut the chicken: Wash the chicken thoroughly and cut it into serving pieces.
Prepare the vegetables: If using green papaya, peel it and remove the seeds, then slice into wedges. If using sayote, peel it, remove the seed, and slice into wedges. Wash the leaves (dahon ng sili or dahon ng malunggay) and set aside.

Step 2: Sauté the Aromatics
Heat the oil: In a large pot, heat 2 tablespoons of cooking oil over medium heat.
Sauté ginger, garlic, and onion: Add the ginger strips to the pot and sauté until fragrant. Follow with minced garlic and chopped onion, and cook until the onion becomes translucent.

Add the chicken: Place the chicken pieces into the pot and cook until they turn light brown, about 5-7 minutes.
